Lighten Up with Spring Recipes!

Today food is as trendy as fashion.  From quinoa and coconut oil to wedges and crop tops, society loves variety and jumping on the next big thing.  We’re no exception to this as our latest obsession is zucchini noodle dishes!  It’s all the comfort and satisfaction of pasta without the guilt of the carb loaded entrée.  With endless varieties and ingredient combinations, we predict that this trend will stand the test of time (unlike crop tops).

To achieve the zucchini noodle, all you need is the handy kitchen gadget called a vegetable spiralizer.  At a variety of price points (some as low as $15), it’s likely most of you can find one to fit the budget.  The user-friendliness of this tool is what we love most!  Even kiddos can operate and have fun helping create a fun, new way to eat their veggies!

Zucchini isn’t the only squash that can be used- we’ve also seen other varieties of summer squash, sweet potatoes and carrots as well.

Once you’ve selected your vegetable of choice, the opportunities are endless!  To make your meal complete, add proteins such as chicken breast, shrimp, steak or tuna.  A healthy fat source could come from avocado, cheese or an oil/yogurt based dressing.  TIP: We love all three of the Profile dressings (Caesar, Asian & Balsamic) as a sauce!

  • Zucchini Noodles
  • Minced Garlic
  • Raw Shrimp
  • Profile Caesar Dressing

Oriental Chicken & Broccoli

  • Zucchini Noodles
  • Red Pepper Flakes
  • Chicken Breasts
  • Broccoli
  • Profile Asian Dressing

Combine all your ingredients into a large skillet, cover and heat for 5-8 minutes.  Bon Appétit!
